The best-preserved Roman temple on the Iberian Peninsula, standing in the heart of Évora since the first century AD. Fourteen Corinthian columns rise from a raised podium against the Alentejo sky — a sight that stops every visitor in their tracks and places the whole morning in a different dimension of time.
Chapel of Bones — A Meditation on Mortality
Built by Franciscan monks in the 16th century, this extraordinary ossuary uses the bones of approximately 5,000 monks as its walls and ceiling. The inscription above the entrance sets the tone: "We bones that are here, await yours." Unsettling, beautiful, and completely unlike anything else in Europe.
Évora Cathedral — Portugal's Finest Medieval Gothic
Construction began in 1186 and the Cathedral of Évora remains the largest medieval cathedral in Portugal. Évora is richest in the morning before day-trippers arrive; Monsaraz and Alqueva are best experienced in the soft afternoon light. But this is your private tour — every stop, every pace, and every route can be adjusted at any moment to suit your interests and energy.
Every aspect of this tour can be adjusted before departure or on the day. Skip the Cathedral rooftop if heights aren't your thing. Spend an extra hour wandering Évora's old town instead. Roman Temple of Diana & the Ancient Forum
Fourteen Corinthian columns — still standing after two thousand years — rise above a raised podium in the centre of Évora's old city. Your guide explains the Roman Forum that once surrounded them and the medieval builders who bricked the columns into a fortress wall, inadvertently ensuring their survival. In the early morning, the square belongs almost entirely to you.
Chapel of Bones & Igreja de São Francisco
The Chapel of Bones was built by Franciscan monks from the bones of approximately 5,000 of their own brothers — walls, pillars, ceiling, all bone. Two human figures hang at the far end. The inscription above the entrance — "We bones that are here, await yours" — is one of the most arresting sentences in the Portuguese language. Entry included.
Évora Cathedral & Rooftop Terrace
Portugal's largest medieval cathedral — construction began 1186. Inside, the Gothic nave is vast and cool; the cloister is one of the most peaceful spaces in the city. A short climb leads to the rooftop terrace: a sweeping 360° panorama over Évora's white domes and chimneys, the Roman temple just below, and the Alentejo plain to the horizon. Évora Old Town — Praça do Giraldo & the Jewish Quarter
Praça do Giraldo is a beautiful arcaded square with a 16th-century fountain at its centre. From here your guide leads you through the Judiaria — one of the best-preserved medieval Jewish neighbourhoods in Portugal — with its narrow lanes, synagogue foundations, and courtyard gardens. A natural moment for coffee and a browse at your own pace.
Private Alentejo Wine Estate — Cellar Visit & Lunch

Monsaraz — The Village on the Ridge
One of the most perfectly preserved medieval villages in Portugal. The main street — barely wide enough for two — runs between whitewashed houses to the 13th-century castle at the far end. Inside the walls: an arena, a tower, and views to Alqueva that stop you in your tracks. No chain shops, no noise. Exactly what it was five hundred years ago.
Alqueva Lake — Golden Hour on the Plains
At 250 km², Alqueva is the largest artificial lake in Western Europe. In the late afternoon light the water turns from pale blue to amber and the plains behind it glow. If you have added the Alqueva Boat Trip add-on, this is where you board for a 45-minute electric boat ride on the still water.
Return to Your Accommodation
Your guide returns you to your accommodation in the Alentejo — or to any agreed drop-off point in the region. The short drive back gives the day's experiences time to settle. If you have added the Alqueva Boat Trip, the tour ends at the lake shore and the return follows from there. Expected arrival back at accommodation: 17:00–17:30, depending on the day's pace.

Premium Alentejo Wine Estate Lunch
Upgrade your estate visit to a full sit-down lunch with curated wine pairing — a three-course seasonal menu prepared from the estate's own produce and the surrounding farms. A typical menu opens with queijo de Évora (sharp sheep's cheese aged in olive oil), presunto ibérico, house-marinated olives, and pão alentejano. The main course is the heart of the Alentejo table: borrego assado (slow-roasted lamb with rosemary and garlic from the wood oven), migas de pão (a rich fried bread dish with chouriço and pork fat), or carne de porco à alentejana — pork medallions with clams and fresh coriander. Dessert is typically sericaia, the aromatic Alentejo egg custard served with crystallised Elvas plums, or toucinho do céu — a dense, sweet almond cake. A flight of four estate wines accompanies every course. Your guide joins you at the table.

Almendres Cromlech — Portugal's Stonehenge
Just 15 minutes outside Évora, hidden among cork oak forest, stands the Almendres Cromlech — an oval arrangement of 95 granite menhirs erected between 6,000 and 4,000 BC, making it one of the oldest megalithic sites in Europe and considerably older than Stonehenge. Most visitors to Évora never know it exists. A 30-minute detour on the way into the city, the site is completely unenclosed, free to walk among, and profoundly atmospheric in the morning light. Your guide will explain the solar alignments and the ceremonial significance of the stones. A remarkable and almost entirely crowd-free experience.

Electric Boat Trip on Alqueva Lake
End the day on the water. A 45-minute private electric boat trip on Alqueva offers a perspective on the Alentejo landscape that is impossible to get from the land — the village of Monsaraz rising on its ridge above the still water, the cork oak shoreline mirrored below, the silence broken only by the soft hum of the motor and the occasional heron. The boats are small, quiet, and completely private to your group. Operated by local partners at the lake's edge. An extraordinarily peaceful way to close an Alentejo day.

Alentejo Olive Oil Tasting & Pairing
The Alentejo produces some of the finest extra-virgin olive oils in the world — pressed from centuries-old trees (Galega, Cobrançosa, Arbequina varieties) and often winning international gold medals. A brief guided tasting at the wine estate introduces you to four oils of different character: grassy and peppery early harvest, ripe and fruity late harvest, a smoked variety, and a herb-infused edition. Tasted with local sourdough bread and compared against a supermarket oil for context. A small experience with a lasting effect on how you think about olive oil.

What to Wear
Comfortable walking shoes for Évora's cobblestones and Monsaraz's stone lanes. Light layers year-round. In summer (June–September), the Alentejo is one of Europe's hottest regions — sun hat, sunscreen, and extra water are essential.

Best Time to Visit
Spring (March–May) and autumn (September–November) offer ideal conditions — mild temperatures and beautiful light. Summer is very hot but rewarding early in the day. Winter tours are quiet, clear, and uncrowded. The Alentejo is beautiful in every season.
